Another recipe without real measurements from me . . .
2 lbs carrots - cut into circles (or use a bag of baby carrots to save time)
6 (or so) Potatoes -- also sliced
about 1 1/2 pounds hamburger (or meat of your choice)
garlic, diced (optional, you can use garlic powder)
onions, chopped, diced, minced, pwd, etc.
salt
pepper
butter (optional -- I usually just put butter on the table for those who want it)
In 13X9 pan, place carrots on one side and potatoes on the other. It will essentially be a little less than 1/3 carrots and the rest potatoes. Add butter if desired. Then form patties with the hamburger and place on top of the carrots and potatoes. Sprinkle garlic, onions, salt, & pepper over everything (to taste). Cover with tinfoil. Cook at 375 degress for 1 hour. Check the carrots and potatoes to see if they are fork tender. Depending on how thick they are sliced, they may need a little more time.
My kids like to put their hamburgers on a bun and have the potatoes and carrots on the side.
I made this tonight with boneless pork ribs (they were on sale). It was really good. I made it before leaving for cub scouts and just had my husband turn off the oven when the timer went off (at one hour).
