So I try to take advantage of sales to stock up my pantry with food that my picky family will actually eat. Ritz crackers is one of those items, although after buying about 7 boxes of them, my family has not touched a single cracker since. Argh! So I searched recipes using Ritz crackers and came upon this one. Even Alex said it was good, and that means a lot!
Serves 6-8
4 chicken breasts, cut into strips
8 oz sour cream
1 1/2 sleeves of Ritz crackers
1 T tarragon
1 t salt
1/2 t pepper
1/2 t cayenne pepper
1/2 t thyme
1/2 c parmesan cheese
1/2 c butter
1. Pour sour cream over chicken and marinate in the refrigerator for an hour.
2. Crush crackers into medium coarse crumbs; mix in seasonings and parmesan.
3. Melt half of the butter and pour on the bottom of 9X13 baking dish.
4. Dredge chicken in the cracker mixture and set in baking dish.
5. Melt remaining butter and pour on top of the chicken.
6. Bake at 350 degrees for 50 minutes until golden brown.
